Ingredients
- 4 eggs
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 cup honey
- 3 cups BRODIE® Self-Raising Cake & Pastry Flour
- 1/2 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1 cup brewed Folgers® Coffee, any type, cooled
Directions
Preheat oven to 350°F (175°C). Grease a 10 cup (1.5 L) Bundt pan.
Beat eggs, sugar, oil and honey together in large bowl of electric mixer, about 2 minutes. Combine flour and spices in small bowl. Add 1/3 of flour mixture to wet ingredients alternatively with 1/3 coffee, beating well after each addition.
Pour into prepared pan. Bake in preheated oven 50-55 minutes or until a toothpick inserted comes out clean. Let cool 10 minutes in pan and invert on cooling rack.
This cake is best made a day ahead to let flavours mingle.
